This coffee is the 74112 varietal and is grown under indeginous shade trees.
The name 'Birbirsa' comes from the Oroomiffa language which is a widely spoken in Ethiopia. It is a name given to an indeginious shade tree which is only found in the region where coffee is produced, and directly translates to English as a "Tree which lives longer and has wide spreading branches".
21 smallholder farmers contributed cherry to this lot, who have an average farm size of 2 hectares. Farmers are paid 65 Ethiopian Birr per kilo of red cherry delivered to the washing station.
This natural processed coffee is dried on raised beds for a period of 21-28 days and then the lot is hand sorted by colour.
The washing station was established in 2018. Maintenance on the station is carried out on a monthly basis. The station recently acquired a hulling machine from Colombia. Station employees also focus on maintaining the transport networks around the station including roads that have been damaged by heavy, erratic rainfall, some of which provide vital access for local schools.
Many parts of Ethiopia have also suffered from drought during the 2021/22 season, meaning access to clean water has been challenging. It's for this reason that high quality washed lots are less common this year and many producers are focussing on the quality of natural lots.
